Farmer's Market Fiesta


There's one thing I look forward to every Saturday morning - hitting the local Farmer's Market! You never know what will be available each week, so it's like a big surprise. One of my favorite finds is figs. They are a rare treat for my palate (wish I owned a whole grove)! Anyhoo, I just returned from my morning's spree, and I had a blast.

Amongst my finds today were some greenish eggs! I've seen brown ones, but green ones? Never! Apparently Dr. Suess knew all about them!

You get to meet and chat with some very interesting people, too. The man in the top picture sold raspberries and lavender and all kinds of things you would not normally have in your own garden (and especially one as rebellious as mine is this year!). He handed out Raspberry Pie recipes, which I thought was extremely smart thinking! Here it is (let me know if you try it, because I haven't given it a go, yet):

Farmer's Market Raspberry Pie

3/4 cup sugar 2 cups egg whites
2 cups raspberries (fresh or frozen; the man above prefers you buy fresh) :)
1 teaspoon vanilla 1 tablespoon lemon juice
Dash salt 1 cup whipped cream
1 pie crust, baked

Combine all the ingredients, except whipped cream and pie crust. Beat 15 minutes, till nice and thick. Fold in the whip cream and pour it all into the baked crust. Place in freezer until ready to eat. Then....slice and serve and say "Yum!".

Afterthought: It was brought to my attention that 2 cups of egg whites is a lot. lollolol. It sure is. So, if you try this recipe, better start with 2 eggwhites and work your way up...if necessary.

I just stopped over from Amanda-Jean's blog-list, and the raspberry pie recipe looks great! But... is that right, the 2 cups egg whites? That's a lot of eggs!

I'm still cracking up over that! Thank you for asking about it. I mean, egg whites are not many calories, but have either of us ever heard of a recipe possessing that amount of them? That recipe was obviously typed without any thought, eh? Let's think... I'm going to make my best guess and say that it would be more reasonable to have two egg whites. What do you think??? :)

Hi, thanks for your comment on our little ol' blog:) You probably shouldn't have asked about the fairy cakes... because now I have to admit that usually I just whip up a packet mix butter cake and whack it into some cupcake or mini-muffin trays... but once they are cooked I do the fairy bit myself... slice the top off, cut it in half to make two semi-circles, put a blob of bakers cream (cream and icing sugar whipped till thickened) on the cake, shove those semicircles back in at an angle to look like little wings. A sweet little dust of icing sugar (powdered sugar) and you are all set to consume some calories:) The boys love them but sadly, I'm not baking very much lately. Keeping up with lunch and dinner has me on the run for the moment. Recipes going Australia to US or reverse often confuse me... I'm never sure if it's something I know but with a different name, what I can substitute ingredients with, all that stuff fries my brain! I hope this one made sense.

Can you take me with you to the next farmers market? We don't have one here and I just heard that the nearest one -only 5 hours away;) has shut down!!! It was on my list to visit for our holiday this week :(
